Summer Recipe Series: Hidden Veggie Muffins

Hidden Veggie Muffins
Makes: 18 muffins

Ingredients: 

  • 2 cups, all-purpose flour 

  • 1 cup oats

  • 1 tsp baking soda

  • 2 1/2 tsp pumpkin pie spice

  • 1/4 teaspoon salt

  • 1/4 cup Now Foods Manuka Honey 

  • 1/4 tablespoon Now Foods Liquid Coconut Oil

  • 2 large eggs

  • 2 cups grated zucchini & carrot

  • 1/2 cup unsweetened apple sauce

  • 1 medium banana, mashed 

  • 2 tsp vanilla extract 

  • 1/4 cup greek yogurt, plain

  • 1/2 cup chopped Now Foods Walnuts 

Instructions:

1. Set your oven to 375°F

2. In a medium-sized bowl, combine the flour, oats, baking soda, salt, and spices. Set this mixture aside.

3. In a separate bowl, blend the honey, coconut oil, eggs, and vanilla.

4. Grate the vegetables and add them to the wet ingredients. Then mix in the applesauce, banana, and yogurt.

5. Gradually add the wet ingredients to the dry mixture, stirring just until everything is moistened. 

6. Line a muffin tin with paper muffin liners.

7. Fill each cup about 3/4 full with the batter. Top with chopped walnuts

8. Place the muffins in the oven and bake for 15-20 minutes!
